– 200 g dark dessert chocolate
– 4 eggs
– a pinch of salt
How to make a homemade, indulgent and ultra-light chocolate mousse
1. Melt the chocolate in a bain-marie or in the microwave until smooth and glossy.
2. Meanwhile, separate the whites from the yolks. Add the yolks to the melted chocolate and mix well.
3. Whip the whites with a pinch of salt until stiff peaks form. Gently fold them into the previous mixture with a spatula.
4. Divide the mousse into individual verrines and refrigerate for at least 2 hours.
Chocolate mousse: one recipe, hundreds of possible variations
Ultimately, chocolate mousse is nothing more than melted chocolate mixed with egg yolks into which the whipped whites are gently folded. But within the category of chocolate mousses, there are a multitude of versions! You can definitely use different chocolates depending on the intensity you want. Then you can sweeten or not your preparation for more sweetness. You can also add spices, fruits, nuts, or even coffee to vary the flavors!
But chocolate mousse does not necessarily require eggs! And yes, you can replace the whipped egg whites with… chickpea juice. Called “aquafaba,” this liquid whips up perfectly like egg whites and the result is truly impressive. We highly recommend trying the recipe; you’ll tell us what you think 😉
