– 200 g speculoos biscuits
– 80 g butter
– 300 g cream cheese
– 200 ml heavy cream
– 80 g sugar

1. Blend the speculoos until you obtain a powder. Add the melted butter, then press the mixture into the bottom of a springform tin. Chill.
2. Beat the cream cheese with the sugar until it becomes softer and more pliable.
3. Whip the heavy cream until stiff peaks and fold it gently into the previous mixture.
4. Pour over the biscuit base. Chill for at least 3 hours.
5. Before serving, decorate the cheesecake with speculoos spread and some crushed speculoos (optional).
