Ingredients
- 1 kg of potatoes
- 2 tablespoons of duck fat
- 6 garlic cloves
- salt, pepper
- herbs of choice (thyme, rosemary…)

Preheat the oven to 200°C.

Wash and cut the potatoes into chunks. Toss them with the duck fat, salt, pepper, and herbs.

Pour into a large dish or directly onto a baking sheet lined with parchment paper and add the garlic cloves (in their skins, so unpeeled) here and there.

Bake for 40 minutes, stirring from time to time for even cooking.
