Ingredients
- 4 salmon fillets (skinless)
- 3 tablespoons maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- For the purée :
- 600 g sweet potatoes
- 20 g butter
- salt, pepper

Preheat the oven to 190°C.

Mix the maple syrup, soy sauce and oil.

Place the salmon fillets in a baking dish and brush them with the previous preparation. Bake for 12 to 15 minutes, basting regularly.

Cook the peeled sweet potatoes in a large pot of boiling salted water until very tender (the blade of a knife should slide in easily).

Drain and mash. Mix in the butter and season with salt and pepper to taste.

Serve the sweet potato purée on plates and place a maple-glazed salmon fillet on top. Enjoy immediately!
