CREAMY MANDARINS RECIPE 🍊
Serves 6
Ingredients :
– 12 mandarins
– 300 ml heavy cream
– 50 g sugar
– Zest of 2 mandarins
– 100 ml mandarin juice
– 2 sheets of gelatin
– Chocolate
Preparation :
1. Cut the mandarins in half, then squeeze them to extract all the juice. Scrape the flesh with a spoon and keep the shells for presentation.
2. In a saucepan, pour in the heavy cream, sugar, zest, and mandarin juice. Bring the mixture to a boil, then, off the heat, add the rehydrated and wrung-out gelatin. Stir vigorously to melt it.
3. Pour the cream into the mandarins’ shells and refrigerate to set for 3 to 4 hours.
4. When the cream is well set, shave chocolate using a vegetable peeler to make pretty shavings and enjoy without delay.
