Duchess Potatoes: When the Classic Becomes Even More Indulgent!
The Duchess potato is a French specialty based on potatoes. Very easy to make, we wanted to revisit this traditional recipe by adding parmesan for indulgence and chives for originality. You’ll see, it’s utterly addictive! Crispy on the outside and creamy on the inside, our pimped Duchess potatoes are going to win everyone over at the table.
Perfect to accompany a piece of meat with some vegetables, you can even offer them in a smaller version for an aperitif. They are endlessly tasty… And don’t worry when you see the amount of butter used in the recipe; it’s perfectly normal. It’s, in fact, the secret to ultra-indulgent Duchess potatoes… Without further ado, discover your new Parmesan and chive Duchess potatoes favorites!
To make this recipe, follow the steps below:
DUCHESS POTATOES RECIPE WITH PARMESAN AND CHIVES
For about 25 pieces
Ingredients:
– 4 or 5 potatoes
– 3 egg yolks
– 50 g grated parmesan
– 200 g melted unsalted butter
– 1 bunch of chives
Preparation:
1. Peel and wash the potatoes. Boil them for about 25 minutes in a large volume of salted boiling water (they should be very tender).
2. Mash the cooked potatoes until smooth. Add the egg yolks, the parmesan, the chopped chives, and the melted butter.
3. Mix until the mixture is uniform. Transfer to a piping bag fitted with a star nozzle and then form the duchess potatoes on a baking sheet lined with parchment paper.
4. Bake for 20 minutes at 200°C to ensure they are nicely golden. Serve with grated parmesan and chopped chives!
Duchess Potatoes VS Dauphine Potatoes: What Are the Differences?
If you don’t know the difference between Duchess potatoes and Dauphine potatoes, it’s very simple. Apart from their different shapes (the Duchess potato is piped into a rosette while the Dauphine potato is a smooth ball), the two recipes are not prepared in the same way at all! On one side, we have Duchess potatoes made from mashed potatoes, egg yolks, and melted butter. On the other, Dauphine potatoes are a mix of mashed potatoes and choux pastry.
So you end up with two very distinct preparations! And yet, it’s impossible to prefer one over the other… Which one do you prefer?
