Richer and more indulgent, the croque-monsieur with béchamel is just as easy to prepare; it just takes a bit more time at the stove. First, melt 30 g of butter in a saucepan, then add 30 g of flour. Mix well to form a roux, then gradually whisk in 400 ml of milk. Once the béchamel has thickened, season with salt, pepper, and nutmeg.
For an even more indulgent result, add half of the grated cheese to the béchamel (100 g) to melt into it.
