After the zucchini nests with eggs, here is an even creamier version with potatoes! We start with a simple Parmesan-flavored mashed potato that we will use as the base of our nests. Then we crack one egg on top that will stay nicely runny after cooking, and finally we add grilled chorizo to spice things up. It’s so easy to recreate at home!

To make this recipe, follow the steps below:

POTATO NESTS, EGGS AND CHORIZO 🥔🐣🌶️

Serves 4

Ingredients :

– 600 g potatoes
– 60 g Parmesan
– 4 eggs
– Diced chorizo
– Fresh parsley
– Olive oil
– Salt, pepper

Preparation :

1. Cook the potatoes in a large pot of salted water (starting from cold) until tender.

2. Drain them, peel them and mash until very smooth. Add the Parmesan and season.

3. Divide into 4 equal portions and shape into nests on a sheet of parchment paper. Bake 15 minutes at 180°C.

4. Remove the potato nests, crack an egg in the center and return to cooking for 10 minutes so that the white sets but the yolk stays runny.

5. In the meantime, grill the chorizo dices in a pan so they become nicely crispy.

6. Serve the nests with chopped parsley and chorizo dices!
