- 4 oeufs
- 100 g de sucre
- 100 g de farine
- 200 g de chocolat noir
- 20 cl de crème liquide entière
- 60 g de orange confite

Preheat the oven to 180°C.

Beat the eggs with the sugar until pale. Fold in the flour gently, then pour onto a sheet lined with parchment.

Bake for 10 minutes. When the sponge is nicely golden, remove from the oven and immediately roll it up in a damp towel, taking care not to break it. Set aside.

Meanwhile, heat the cream in a saucepan until just simmering. Pour over the chopped chocolate in three additions and emulsify to obtain a smooth, glossy ganache.
