Ingredients

  • 200 g green lentils
  • 100 g goat cheese
  • 50 g walnut kernels
  • 1 shallot
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • salt, pepper

Preparation

Cook the lentils according to the package instructions. Drain.

Whisk the olive oil with the vinegar. Salt, pepper and add the shallot finely minced.

Pour the vinaigrette over the warm lentils, add the crumbled goat cheese and the roughly chopped walnuts.
