Spiced Leg of Lamb: The Best Cooking Technique for Tender and Flavorful Meat

For a family Easter lunch or for any other occasion, go for a leg of lamb to delight the whole table without any fuss! This mustard, parsley and spice marinade is incredibly indulgent and fragrances the meat effortlessly. To ensure the meat is very tender and melts in your mouth, opt for slow cooking at a low temperature. Plan about 4 hours at 160°C for an irresistible result!

The secret technique is to wrap the leg of lamb in parchment paper and then in aluminum foil; this will allow the meat to cook in its own juices without burning. You will only need to add a little water about an hour before the end, along with potatoes to obtain a convivial and generous dish! It’s really delicious and very easy to make, ideal for a family Sunday lunch, for example.

To make this recipe, follow the steps below:

SPICED LEG OF LAMB 🍖🌶️

Serves 6

Ingredients:

– 1 leg of lamb
– 1/2 bunch of parsley
– 6 garlic cloves
– 3 tbsp mustard
– 1 tbsp smoked paprika
– 1 tsp ground cloves
– 1 tsp Espelette pepper
– 100 ml olive oil
– 1 kg potatoes
– Salt, pepper

Preparation:

1. In a blender, place the parsley, garlic cloves, mustard, smoked paprika, ground cloves, Espelette pepper and pour in the olive oil.

2. Blend until a smooth, homogeneous marinade is obtained.

3. Generously salt and pepper the leg of lamb, then brush it with the marinade over the entire surface. Wrap it tightly in parchment paper, then in aluminum foil.

4. Place in the roasting pan and bake at 160°C for 3 hours.

5. Remove the leg from the oven, carefully open the paper and add the potatoes cut into pieces along with a cup of water in the dish. Continue cooking for 1 more hour, until the meat is tender and the potatoes are nicely golden.
