ROASTED CLEMENTINES AND WHIPPED YOGURT RECIPE
Serves 4
Ingredients :
– 4 large clementines
– 2 tbsp liquid honey (or maple syrup)
– 1 pinch ground cinnamon
– 1 star anise
– 1 small cinnamon stick
– 1 tbsp toasted hazelnuts
– 300 g Greek yogurt
– 1 tbsp powdered sugar (optional)
Preparation :
1. Preheat the oven to 180°C (fan-forced).
2. Peel the clementines, removing all the white pith. Place them in a small ovenproof dish lightly greased and drizzle with honey.
3. Sprinkle with ground cinnamon and add the star anise and the cinnamon stick to the dish. Bake for 10 to 12 minutes until the clementines are glossy and caramelized.
4. Remove from the oven and let cool slightly.
5. Whisk the Greek yogurt in a bowl until smooth and slightly fluffy.
6. Add a little powdered sugar (optional) to sweeten the yogurt.
7. Plate the portions: lay down a layer of whipped yogurt, then add a roasted clementine on top. Drizzle with the cooking juices and sprinkle with chopped hazelnuts.
8. Serve still warm or at room temperature!
