ASIAN-STYLE CUCUMBER SALAD 🥒
Serves 2 to 4
Ingredients:
– 1 cucumber
– 1 red onion
– 2 tbsp fresh cilantro
– 1 tbsp gochujang (Korean chili paste)
– 1 tsp chili flakes (optional)
– 2 tbsp soy sauce
– 2 tbsp rice vinegar
– 1 clove garlic, minced
– 1 tsp mirin
– 1 tbsp sesame oil
– 1 tbsp lime juice
– Zest of 1 lime
– Sesame seeds
Preparation:
1. Slice the cucumber into thin rounds and finely slice the red onion.
2. Place the cucumber, red onion, and cilantro in a bowl. Add the gochujang, chili flakes, soy sauce, rice vinegar, minced garlic, mirin, and sesame oil.
3. Mix well, then add the lime juice and lime zest. Sprinkle with sesame seeds.
