SHREDDED BEEF THAT MELTS IN THE MOUTH AND MASHED POTATOES
Serves: 4
Ingredients:
– 1 kg chuck or blade beef
– 2 onions
– 3 carrots
– 2 garlic cloves
– 1 bouquet garni
– 250 ml red wine
– 500 ml beef stock
– 1 drizzle of olive oil
For the mashed potatoes:
– 800 g potatoes (Agata or Monalisa variety)
– 50 g butter
– Salt, pepper
– Fresh parsley (for garnish)
Preparation :
1. Pour olive oil at the bottom of a casserole. Sear the beef piece on all sides to achieve a nice coloration and a well-browned crust. Set aside.
2. In the same casserole, sauté the sliced onions and peeled carrots cut into rounds in the meat juices. Add the minced garlic and the bouquet garni.
3. Return the meat to the casserole, then add the red wine and the beef stock. Cover the casserole and let simmer over very low heat for 2 to 3 hours so that the meat easily pulls apart.
4. Next to it, cook the potatoes in salted boiling water for about 25 minutes.
5. Mash the potatoes with a fork, incorporating the butter. Salt and pepper.
6. Shred the beef with two forks, then plate: use a ring mold to tamp down the mashed potatoes and add the meat on top.
