This creamy one-pot rice with vegetables and Parmesan brings together everything you need: simplicity, speed, economy, and indulgence. Even faster than a risotto, you will only need one pot to cook everything at once. We add the Parmesan at the end of cooking to bind everything together and make this dish very tempting.

This economical and tasty recipe is really going to save your dinners! The whole family will enjoy this plate of rice, and if there is any left, you can easily take it to work in your lunch box the next day. In under 30 minutes and with just one pot, you can work wonders in the kitchen!

The basic ingredients for a generous recipe

– 200 g of rice
– 1 zucchini
– 1 carrot
– 1 onion
– 50 g of Parmesan
– 60 cl of vegetable stock
– 1 tablespoon of olive oil
– Salt, pepper

One pot for this ultra-creamy rice, 30 minutes max

1. Slice the onion and dice the vegetables into small cubes.

2. In a sauté pan, sauté the onion with olive oil for 2 to 3 minutes to color it. Add the vegetables and the rice, stir well.

3. Pour in the stock and let cook over medium heat for 15 to 20 minutes, stirring from time to time.
