After having LOVED our dry sausage tartare (yes, yes, millions of you have seen it pass by…), we present to you our new version with chorizo! Even more flavorful and always as easy to make, it is the perfect aperitif to share a convivial moment among friends. To prepare it, it’s very easy: a chorizo cut into small pieces, lots of flavorful condiments and a crazy seasoning. We mix everything together and that’s it! For the accompaniment, think about toasting a few slices of bread, it’s irresistible.

Choose a mild or hot chorizo according to your preferences. And if you like it when it’s caliente, add a little chili or Tabasco to taste! Tender and crunchy at the same time, the chorizo tartare will make you blush with pleasure. Enough chatter, here is the ultra-simple and quick recipe for an incredible aperitif!

Ingredients for 4 to 6 people

– 150 g mild or hot chorizo
– 3 sun-dried tomatoes
– 1/4 red pepper
– 1/2 red onion
– A few sprigs of chives or cilantro
– 1 tsp whole-grain mustard
– 1 tbsp olive oil
– 3 drops of Tabasco (optional)
– A few drops of lemon juice

Optional but recommended : add a few capers or chopped small cornichons for a zingy touch!

How to make a chorizo tartare for the aperitif ?

1. Remove the chorizo skin and cut it into small, very regular dice.

2. Cut the sun-dried tomatoes, red pepper and onion into a fine brunoise. Finely chop the fresh chives.

3. Bring everything together in a bowl then add the mustard, olive oil and lemon juice. Season with Tabasco to taste and add the capers or finely chopped cornichons.

4. Gently mix to bind everything and plate in a dish using a ring mold for a nice presentation. Add slices of toasted bread all around and enjoy!

Tips and advice to perfectly succeed the chorizo tartare every time

For a perfect result, it all comes down to the cut. So grab your sharpest knife (being careful not to cut yourself…) and slice uniform small dices. It is important that all ingredients (chorizo, pepper, tomatoes and onion) are the same size for a uniform tasting. After adding the seasoning, don’t mix too long to avoid turning it into a mush.
