How to make soft, melt-in-your-mouth and crispy chocolate and pistachio crepes?
1. Mix the flour, sugar and salt in a bowl. Add the eggs one by one while whisking, then gradually pour in the milk to avoid lumps.
2. Finally add the melted butter, mix then let the crepe batter rest.
3. Chop the chocolate and place it in a bowl. Heat the cream in a saucepan until rising to a boil, then pour it over the chocolate. Stir well until a smooth and glossy texture is obtained.
4. Brown the angel hair Kadaïf in a pan with butter so that they are crispy. Mix them with the pistachio paste in a bowl. Set aside.
5. Cook the crepes in a greased pan until the batter is finished.
6. Fill the crepes with the chocolate ganache and the pistachio heart. Fold them into a nem shape and arrange three crepes per plate.
7. Decorate with a drizzle of pistachio paste and a drizzle of chocolate glaze. Sprinkle with roasted pistachio pieces and enjoy without waiting!
