By the way, it’s a point of the recipe to keep for creating many other genius ideas! Next, we will bread large shrimp with preferably panko breadcrumbs for a very crispy result. For plating, we rely on the combo of a good sourdough bread toasted and generously spread with confit garlic, a generous layer of creamy burrata, and finally freshly breaded shrimp. With a touch of chives for freshness and chili flakes for the kick, it’s simply irresistible!

GARLIC TOAST WITH BREADED SHRIMP 🍤
Serves 2
Ingredients:
- 2 nice slices of sourdough bread
- 14 garlic cloves
- Olive oil
- 1 sprig of rosemary
- Salt
- 1 burrata
- Fresh chives
- Chili flakes
For the breaded shrimp:
– 6 large shrimp (16/20 count), peeled and deveined
– 1 egg
– 2 tbsp cornstarch
– 1/2 tsp paprika
– 1/2 tsp onion powder
– 1/2 tsp garlic powder
– Salt and pepper
– Panko breadcrumbs
Preparation:
- In a saucepan, place the peeled garlic cloves and cover with olive oil. Add a pinch of salt and the rosemary sprig, then let confit over low heat until the garlic cloves are nicely golden and melt-in-your-mouth.
- Toast the slices of bread in a skillet with a drizzle of olive oil until nicely golden on both sides.
- Beat the egg with the cornstarch, paprika, onion powder, garlic powder, salt and pepper. Add the shrimp to this mixture to coat them well. Then roll them in the panko breadcrumbs.
- Fry the breaded shrimp in hot oil until they are nicely golden and crispy. Place them on paper towels to remove excess fat.
- Mash the confit garlic onto the slices of bread, then add the burrata and finally place the breaded shrimp on top. Finish with finely chopped fresh chives and a few chili flakes!
You can confit the garlic in a small casserole dish in the oven.
