GIANT EXPRESS SUSHI SQUARE 🍣
Serves 6
Ingredients :
For the rice :
– 300 g Japanese short-grain rice (sushi rice)
– 400 ml water
– 4 tbsp rice vinegar
– 2 tbsp sugar
– 1 tsp salt
For the filling :
– 6 to 8 slices smoked salmon
– 2 ripe avocados
– 200 g cream cheese
– 1/2 lemon
– Sesame seeds
Preparation :
1. Prepare the sushi rice: rinse the rice until the water runs clear. Pour the rice into a saucepan with the water, cover and bring to a boil. Reduce the heat to minimum and cook for 12 minutes. Turn off the heat and let rest for 10 minutes, covered.
2. Mix the rice vinegar with the sugar and salt, pour over the cooked rice and mix well. Let cool aside.
3. Line a square mold with plastic wrap, lifting it up over the edges. Place the smoked salmon slices at the bottom, spread the cream cheese and lay thin slices of avocado to cover everything. Drizzle with lemon juice to prevent the avocado from browning.
4. Cover with the cooled sushi rice and press with a damp spoon to compress everything.
5. Fold the plastic wrap back and refrigerate for at least 1 hour. Unmold by turning the mold onto a cutting board, sprinkle with sesame seeds, cut into squares and enjoy!
