1. Cut the pepper and onion into thin slices. Sauté them quickly in a skillet with a little olive oil until they become tender.

2. On one tortilla, place the vegetables and grated cheese. Cover with another tortilla and repeat with the remaining two tortillas.

3. Brown the quesadillas in a pan with a lid so the cheese melts.
