SIAL Paris is the world’s largest laboratory of agro-food innovation, on the occasion of which the products showcased in supermarkets and restaurants for the next two years are decided.
The challenge of ecological consumption
For this 2026 edition, the challenge will be to reconcile pleasure, overall health, and reducing environmental impact. A credo built around three flagship pillars:
– Upcycling & anti-waste: valorize food by-products and limit waste.
– Alternative proteins: diversify plant-based sources without compromising taste.
– Transparency: strengthen farm-to-plate traceability.

SIAL Paris 2026 will also highlight street food, which has become the favorite playground of chefs and brands. Exhibitors will propose recipes crafted with local and seasonal products, through a fusion of culinary cultures and smart nomadic formats.
10 future consumption trends to discover
Finally, it will be an opportunity to discover 10 food trends decoded by SIAL Insights 2026, among which we find the rise of plant-based living, with vegetables and legumes taking a growing place on the plate. Other trends on the program: anti-waste, enhanced snacking, or functional foods, which combine nutrition and well-being.

Reserved for food professionals, SIAL Paris 2026 is accessible upon presentation of an entry badge, to be reserved on the event’s official site. Ticket prices and access terms are available on the show’s ticketing page.
