– 120 g brown sugar
– 1 pinch of salt
For the caramelized apples:
– 3 large apples (Golden or Pink Lady)
– 30 g butter
– 40 g light brown sugar
– 1 tsp ground cinnamon (optional)
For the cheesecake filling:
– 500 g cream cheese
– 100 g white sugar
– 2 whole eggs

Instructions:
1. Prepare the crumble: mix the flour, the cold butter, the brown sugar and the salt with the tips of your fingers until you obtain a sandy texture.
2. Line the bottom of a square pan with two-thirds of the crumble and press the base firmly. Reserve the remaining crumble in the fridge.
3. Cut the apples into cubes and sauté them in a skillet with the butter, the sugar and the cinnamon until they are very tender and caramelized.

6. Bake 50 minutes at 180°C so that the cheesecake is well cooked and the crumble well golden. Let cool completely.
7. Cut into squares and enjoy!
