To make this recipe, follow the steps below :

SWEET POTATO TACOS, MARINATED SALMON, PEA AND BROCCOLI CREAM 🌮

Serves 4

Ingredients:

For the marinated salmon:
– 500 g skinless salmon fillet
– 2 tbsp soy sauce
– 1 tbsp honey
– 1 tbsp lime juice
– 1 tsp sesame oil
– 1 small garlic clove
– 1 cm piece of fresh ginger

For the sweet potato tacos:
– 500 g sweet potatoes
– 2 eggs
– 100 g corn starch
– 1 tbsp paprika

For the pea and broccoli cream:
– 150 g peas (fresh or frozen)
– 150 g broccoli florets
– 100 g cream cheese
– a splash of lime juice
– 1 tbsp olive oil
– salt, pepper

To serve:
– a few fresh blueberries
– a few fresh mint leaves
– sesame seeds

Preparation:

1. Mix the soy sauce with the honey, lime juice, sesame oil, minced garlic and ginger. Pour the marinade over the salmon in an airtight container. Refrigerate for at least 2 hours.

2. Grate the peeled sweet potatoes, then mix them with the eggs, corn starch and paprika until a smooth batter forms.

3. Shape discs from this mixture on a baking sheet lined with parchment paper, then bake 20–25 minutes at 180°C.

4. When they come out of the oven, place the tacos immediately on a rolling pin or in taco molds to give them a rounded shape. Let cool.

5. In the meantime, cook the salmon in a skillet for 3–5 minutes depending on the size of the fillets. When the salmon is cooked, crumble it with a fork.

6. Cook the peas and broccoli in a large pot of salted boiling water (or steam) until very tender. Drain and transfer to a blender.

7. Blend the vegetables with the cream cheese, a splash of lemon juice and the olive oil until you obtain a smooth, creamy texture. Taste and adjust the seasoning with salt and pepper. Add a little water if needed to adjust the cream’s texture (note: it must not be too liquid).

8. Serve the tacos immediately with the pea and broccoli cream, the marinated salmon crumbles, fresh blueberries, a bit of chopped fresh mint and some sesame seeds. Enjoy!
