This very creamy and flavorful vegetarian version will win you over to seasonal vegetables. Carrots, leeks, and mushrooms make the perfect mix! Moreover, it’s incredibly easy and quick to prepare, in less than 30 minutes (prep + cooking), so you can sit down to enjoy this very warm and convivial vegetarian recipe.

Ingrédients pour 4 personnes

– 6 carrots
– 4 leeks
– 300 g mushrooms
– 20 cl heavy cream
– 50 cl vegetable stock
– 1 bouquet garni
– Salt, pepper

1. Wash, peel and cut the vegetables into chunks. Place them in a Dutch oven and pour in stock to cover.

2. Add the bouquet garni and simmer covered for about 20 minutes.

3. Remove a little broth if there is too much and pour in the cream. Let simmer a few minutes and adjust the seasoning if needed.
