It’s THE recipe that has been circulating everywhere on social media at the start of the year. All the food influencers have recreated it, so we asked ourselves “but is it really as good as they say?“. And the answer is YES! The Japanese cheesecake in a yogurt pot is the perfect technique to treat yourself to a simple and quick dessert with only 2 ingredients. A pot of Greek yogurt, speculoos (or other biscuits), and that’s it! The preparation takes only 2 minutes flat, you just have to wait several hours (an entire night) to devour it until you scrape the bottom of the pot…
And because we didn’t want to do like everyone else and because we’re big gourmands (oops), we allowed ourselves to add an ultra-creamy topping with speculoos cream and a few biscuit shards on top. The pinch of fleur de sel is optional but it changes everything—you’ll see! So, no, it’s not really a cheesecake we grant you, but never mind. It’s sooo good and we’d eat it every day! JAPANESE CHEESECAKE WITH SPECULOOS 😍
For 1 cheesecake
Ingredients:
– 1 individual pot of Greek yogurt
– 4 to 6 speculoos cookies
– 1 tablespoon of speculoos cream
– a splash of heavy cream
Preparation:
1. Open the pot of Greek yogurt and directly insert the speculoos cookies into it.
2. Gently warm the speculoos cream with a little heavy cream so the mixture becomes more fluid, and pour over the yogurt.
3. Decorate with shards of speculoos cookies and a pinch of sea salt (optional). Close the yogurt and refrigerate overnight.
4. The next day: enjoy!
Tip: if you like sugar in your yogurt, consider adding some and mixing your yogurt well before inserting the cookies.
