Economical and simple velouté: the light homemade leek recipe
Creamy soups and soups are your best friends to spend a winter that is cozy and indulgent! Very easy and quick to prepare, there are a multitude of recipes to make at home to delight the whole family. Today’s one is light, healthy and very economical since it only requires two ingredients: leeks and potatoes. We added a bouillon cube to flavor our soup but you can simply season with salt and pepper (or not season at all but we do not recommend this alternative if you want at least some flavor…).
Perfect for winter, this soup can be enjoyed on its own or accompanied by small garlic croutons, a generous slice of bread with cream cheese, or with a touch of cream for an even silkier velouté. The recipe easily adapts for a family or friends’ dinner when you want a light yet indulgent dish. Off to your pots, you’re going to be in for a treat!
Budget-friendly ingredients for 4 servings
– 3 leeks
– 3 large potatoes
– 1 vegetable bouillon cube
Easy and quick homemade leek soup
1. Peel the potatoes and cut them into large chunks.
2. Slice the leeks and rinse them well under clear water.
3. Pour the vegetables into a saucepan and cover with water to the level. Add the bouillon and simmer covered for about 30 minutes until the vegetables are tender.
4. Blend and adjust the seasoning if needed. Serve hot!
Tips and variations for a generous and indulgent vegetable soup
We warned you: it’s really a super simple and quick soup recipe to prepare! There’s nothing to do, apart from indulging yourself. But if you like veloutés that are more original, there are many ways to make them more indulgent. Our favorite technique is to roast our vegetables (butternut, sweet potato, cauliflower…) in the oven and then blend them with hot broth and a little cream. That gives an ultra-fragrant velouté and a bit thick, just the way we love it!
Also vary the seasonings with the spices of your choice, and use coconut milk in your velouté recipes for a very creamy and slightly exotic touch. It pairs very well with sweet potatoes, for example. Finally, the best way to make a soup more indulgent is with toppings: roasted feta, savory granola, homemade croutons, ham chips… Treat yourself!
