There are many versions you can prepare at home, and many of them only require simple ingredients to obtain a delicious traditional flavor, just like this atole de galletas.

The atole de galletas is one of the easiest options to prepare at home. Even if you don’t have many ingredients, it is an ideal alternative to accompany your breakfast or enjoy in the afternoon with a delicious sweet bread. The thick texture and its milky flavor make this cookies atole a very comforting drink that, moreover, is prepared in a few steps. If you want to know what you have to do to make it yourself at home, keep reading, because here we explain it.

An atole without cornstarch

Traditionally, the atole thickens with elements such as the cornstarch or the masa nixtamalized corn dough. However, unlike other recipes, this atole does not need any of these elements to achieve its characteristic consistency. In this case, we use the cookies, which contain flour and, when crushed and mixed with the hot milk, help to thicken the atole. The key is to use the right amount of this ingredient and cook while stirring to prevent the mixture from sticking to the bottom. Thus you can obtain a creamy atole that is neither too thick nor too liquid.

For this version of cookie atole, we recommend using María-type cookies. Their mild and slightly sweet flavor pairs very well with the rest of the ingredients, such as evaporated milk and condensed milk. However, this recipe is very versatile and you can experiment by changing the cookies for other varieties, with different flavors and presentations, to give your drink a special touch. Just keep in mind that the type of cookies you choose and their flavor will influence both the taste and the final consistency, so you may need to slightly adjust the amount of milk and sweetness, or you may even need to incorporate a bit of cornstarch to thicken.

Cookie atole

  • 90 grams of María-type cookies

  • 4 cups of milk

  • 1 1/2 cups evaporated milk

  • 1 cup condensed milk

Steps

  • Chop the cookies and place them in a container with the evaporated milk and one cup of milk.

  • Place the rest of the milk in a pot with the condensed milk and bring to medium heat.

  • While the milk heats, blend the cookie mixture with evaporated milk until you obtain a smooth paste.

  • When the milk is boiling, add the cookie paste and lower the heat.

  • Cook while stirring until the drink reaches an atole-like consistency.

Puedes agregar otras especias aromáticas para complementar el sabor.

Once your atole is ready, you can accompany it with a little crushed cookies on top. As it is a thick drink, the cookies will take a bit longer to dissolve, which gives a slightly crunchy texture to each sip of your preparation. You can also incorporate other ingredients during its elaboración if you want to add extra flavor notes, but you do not want to change the cookies. For example, you can add a cinnamon branch to the milk while it heats to perfume it or add a splash of vanilla at the end of the preparation if you would like to incorporate that traditional flavor into your atole.
