We don’t always have time to cook for hours, but that doesn’t mean we should eat anything at all. It is perfectly possible to treat yourself in no time with simple and affordable ingredients! The proof is in our recipe of the day: small creamy pasta with cherry tomatoes and burrata. Of course, you can replace burrata with parmesan if you prefer; it’s just a topping for extra indulgence.
This vegetarian dish is ideal for a family dinner, for hosting friends or to charm your date!
We chose ditalini, these small pastas for their comforting feel, but you can choose your favorite pasta to mix with this incredibly tasty sauce. The secret to a perfect sauce is to add a little of the pasta cooking water to bind all the ingredients and obtain a creamy, glossy coating. So, are you salivating? CREAMY PASTA WITH CHERRY TOMATOES AND BURRATA 🍝😍
Serves: 2
Ingredients :
– 250 g small pasta (ditalini)
– 250 g cherry tomatoes
– 4 garlic cloves
– 100 ml dry white wine
– 1 tablespoon tomato paste
– 200 ml heavy cream
– 1 burrata, very creamy
– 1 teaspoon chili pepper (adjust to taste)
– A few sprigs of oregano or fresh basil
– Olive oil
– Salt, pepper
Preparation:
1. Peel and crush the garlic cloves. Halve the cherry tomatoes.
2. In a sauté pan, brown the garlic cloves with olive oil. Add the cherry tomatoes and let them simmer over medium heat.
3. Deglaze with the white wine and let reduce for a few minutes. Remove gently the tomato skins that detach during cooking.
4. Stir in the tomato paste, then season with salt, pepper and chili according to your taste. Pour in the cream, mix well and let simmer over low heat.
5. Cook the pasta in a large pot of salted boiling water following the package instructions.
6. Add the drained pasta directly to the sauce and mix well. Serve immediately with creamy burrata and a few sprigs of oregano or basil!
