Savory Zucchini Waffles: Fluffy, Easy Recipe in 10 Minutes

Then, we spread ultra-creamy stracciatella over the waffles and place handsome slices of smoked salmon. A few leaves of arugula or freshly chopped herbs, a bit of lemon juice and there’s only one step left (the simplest): tasting!

To make this recipe, follow the steps below :

ZUCCHINI WAFFLES WITH SMOKED SALMON 🧇🍣

Serves 4

Ingredients :

– 1 medium zucchini (about 200 g)
– 2 eggs
– 90 g flour
– 1/2 packet baking powder
– 120 g plain yogurt
– 1 teaspoon curry powder
– A handful grated cheese
– Salt, pepper

For the filling:
– 200 g smoked salmon
– 150 g stracciatella
– A few leaves of arugula or fresh herbs (dill or chives)
– Lemon juice
– Ground black pepper

Preparation :

1. Finely grate the zucchini and squeeze it in a clean cloth to remove as much water as possible.

2. Whisk the eggs and the plain yogurt in a bowl. Add the flour, baking powder, curry powder and mix until the batter is homogeneous. Incorporate the grated zucchini and the grated cheese, season to taste and mix well.

3. Pour a ladleful of this batter into a hot waffle iron and let it cook a few minutes until the waffles are golden and crispy.

4. Serve the waffles while still hot with the stracciatella, smoked salmon, arugula (or fresh herbs), a squeeze of lemon juice and a grind of pepper. Close with another waffle and enjoy immediately!
