Follow the step-by-step guide we’ve left here to learn how to prepare them from scratch.
How to shape pumpkin cookies
The key to giving these cookies the pumpkin shape lies in the kitchen twine. The first thing you have to do is prepare the dough and form small round portions. Ideally refrigerate the mixture in advance so you can handle it easily. When you have portions of similar size, you should cut three small pieces of twine and place them in the shape of a star, making the fibers cross at the center. Place a portion of dough right where the twine meets and, carefully, bring the ends to the top of the sphere, tying to keep the dough in place.
You should repeat this step for each cookie and place these portions on a baking sheet lined with parchment paper. Don’t worry about the twine, as it can bake without issue, provided you use cooking twine. As they bake, the dough will expand and the twine will leave marks around the cookies, creating the typical divisions that characterize a pumpkin. Once the cookies are ready, you can carefully remove the twine and add on top a small piece of cinnamon to represent the stem or add a peeled pumpkin seed for the same purpose.
