The trick to baking crispy and indulgent cookies

To start, make a very simple cookie dough with flour, very cold butter (careful, this is very important to succeed with the dough), icing sugar, one whole egg and one egg yolk for texture and a bit of vanilla for the gourmand note. We recommend not overworking the dough so that it stays nice and pliable. Then, you just have to wrap it and let it rest in the fridge for ideally 1 hour. You’ll see, it’s much easier to roll out and obtain perfect cookies. Regarding baking, we suggest setting your oven to 170°C or 180°C and baking the cookies for 10 to 20 minutes depending on your oven’s power. Keep a close eye so the cookies are nicely golden without burning!

To make this recipe, follow the steps below :

STRAWBERRY COOKIES 🍓

Makes 12 to 15 cookies

Ingredients :

– 300 g of flour
– 150 g of cold butter
– 100 g of icing sugar
– 1 whole egg + 1 egg yolk
– 1 teaspoon vanilla extract
– Fresh strawberries
– Fresh mint leaves

Preparation :

1. Mix the flour and the cold butter cut into small cubes with the tips of your fingers until you obtain a sandy mixture.

2. Add the icing sugar, the whole egg, the egg yolk and the vanilla extract. Work the dough by hand until you obtain a smooth, homogeneous ball. Wrap and chill in the fridge.

3. Roll out the dough with a rolling pin on a floured work surface, then cut out cookies using a cookie cutter (or, if necessary, a glass).

4. Wash and slice the strawberries into thin petals lengthwise. Pat them gently on paper towels and then place a slice in the center of each cookie.

5. Add a mint leaf on top and press lightly so that it holds well during baking.

6. Bake for 15 minutes at 180°C until the cookies are nicely golden (watch according to your oven). Let them cool completely before tasting.
