CREAMY TORTELLINI WITH FRESH TOMATOES AND BURRATA 🍝
Serves 4
Ingredients:
– 6 tomatoes
– 3 tbsp olive oil
– 1 tsp garlic powder
– 2 tsp dried oregano
– 2 tsp dried basil
– 1 tsp black pepper
– 200 to 300 ml chicken stock
– 200 ml cream
– 500 g cheese tortellini
– 40 g grated Parmesan
– 1 burrata
– A few fresh basil leaves
Preparation :
1. Heat the olive oil in a pot (or a large skillet), then add the halved tomatoes, cut side down.
2. Cook covered until the tomatoes soften. Remove the skins carefully, then crush the flesh with a spoon or fork.
3. Season with garlic, oregano, basil and pepper. Salt, then pour in the chicken stock and the cream. Stir and bring to a gentle boil.
4. Add the tortellini to the sauce and let simmer slowly, stirring occasionally so the pasta becomes tender.
5. Stir in the Parmesan to obtain a very creamy sauce. Remove from heat and place the burrata opened in the center.
