When we saw this recipe making the rounds on social media, we had to try it. And how can I say it’s 100% validated! To recreate it at home, there’s nothing simpler: we prepare a simple and generous vegetable filling (here grated carrots and red cabbage) with grated cheese and smoked paprika to spice things up. Then, we quickly dip a rice paper sheet in water to soften it and place it in a hot pan with a little sesame oil. We fill it with the filling and close with a second moistened rice paper sheet. Let it brown for about 10 minutes, turning occasionally, for a result that’s melting on the inside and crispy on the outside.
It’s really delicious! Perfect for a healthy and indulgent little snack, you can serve this recipe as an appetizer or for a quick and effortless dinner. The advantage is that you can treat yourself by varying the filling, the assembly stays the same. CRISPY RICE PANCAKES WITH VEGETABLES 🫓💚
Serves 2
Ingredients :
– Rice papers
– 4 grated carrots
– 1/4 shredded red cabbage
– 2 scallions finely chopped
– 1 tablespoon sesame oil
– Parsley or cilantro
– 1 teaspoon smoked paprika
– Grated cheese (comté, mozzarella, emmental…)
– Salt, pepper
Preparation :
1. Mix the grated carrots with the red cabbage, the scallions, the sesame oil, the paprika and the cheese in a bowl.
2. Season with salt and pepper according to your preferences.
3. Briefly moisten one rice paper sheet and place it in a lightly oiled frying pan. Add the filling in the center.
4. Moisten a second rice paper sheet and place it on top of the first, taking care to join the edges. With a culinary brush, lightly oil the surface and make two or three small incisions to let the air escape.
5. Let cook over medium heat for 10 to 15 minutes, turning regularly so that the rice pancake is nicely browned and crispy. Enjoy!
