You’re not ready for this much indulgence! We present our new recipe for lemon potato croquettes to dip into a (not so) secret sauce for maximum pleasure. Under a crispy shell, we melt into a purée delicately seasoned with lemon zest for that zing. It’s crunchy, creamy and above all, incredibly easy to recreate at home! Don’t hesitate to vary the seasonings according to your preferences, but we love this lemon version, especially with the lemon-shaped cutouts as a nod to the sunny scents of the croquettes.
For the sauce, nothing simpler and fresher: Greek yogurt, lemon juice and a few chopped fresh herbs! Dill, chives, parsley, cilantro… Choose according to your preferred herb! This light sauce will pair wonderfully with your little potato croquettes; you’ll be licking your fingers.

LEMON POTATO CROQUETS 🍋🥔
Serves 4
Ingredients:
– 800 g potatoes
– 2 Tbsp cornstarch
– 1 Tbsp paprika
– 1 tsp garlic powder
– Lemon zest
– Frying oil
Preparation:
1. Peel the potatoes, then steam them until very tender. Mash into a smooth purée.
2. Incorporate the cornstarch, paprika, garlic powder, and the zest of one lemon. Mix well.
3. Spread the dough on a tray about 1.5 cm thick, then chill until firm.
4. Cut shapes from the firm mashed potato using a cookie cutter, then fry in hot frying oil. The croquettes should be nicely golden!
5. Drain on paper towels.
