Grapefruit or Crème Brûlée? Fall for this fruity and creamy dessert!
Our passion for fruits in the style of crème brûlée isn’t over yet… After bananas, passion fruit, oranges, lemons or even coconuts, we played with a tart grapefruit version! The cream scented with this sweet and bitter citrus is ultra-silky and the caramelized sugar layer is wonderfully crunchy, it’s impossible to resist so much indulgence. And as always, it’s super easy and quick to make at home.
It’s really the perfect dessert to finish the meal with a fresh, light, and fruity note! To correctly remove the grapefruit flesh, we recommend using a spoon to thoroughly scoop the pulp without piercing the rind. Choose grapefruits with smooth and firm skin and pay attention to their weight: the heavier they are, the juicier they will be. GRAPEFRUIT CRÈME BRÛLÉE 🍊😍
Serves 4
Ingredients :
– 2 large pink grapefruits
– 4 egg yolks
– 4 tbsp caster sugar (about 55 g)
– 2 tbsp cornstarch (about 25 g)
– 200 ml milk
– 30 g unsalted butter
– Brown sugar for caramelizing
Preparation :
1. Cut the grapefruits in half and scoop out the flesh without piercing the shells.
2. Squeeze the flesh to obtain the juice and strain (about 55 ml).
3. In a saucepan, whisk the egg yolks with the sugar and add the cornstarch. Mix well, then pour in the milk and the grapefruit juice.
4. Cook over low heat, stirring constantly, until the custard thickens. Off the heat, add the butter and stir so that the custard is smooth and glossy.
5. Fill the grapefruit shells with the custard and let them cool.
6. Before serving, sprinkle with brown sugar and caramelize with a blowtorch. Enjoy immediately!
