The Texture of This Egg and Feta Spread Is Incredible

Hard-boiled eggs, feta, Greek yogurt and fresh herbs: the best combo for the aperitif

Among the many spreads for the aperitif we’ve tried, this is the BEST of them all! This blend of hard-boiled eggs, feta, Greek yogurt, fresh herbs, spices and toasted pine nuts… The texture is truly perfect and the flavor is simply addictive. Whether with carrot sticks or toasted bread, we love it! Don’t hesitate to add the Greek yogurt gradually to obtain a beautiful creamy and homogeneous consistency, it’s up to you to judge on this point.

For the seasonings, choose the aromatic herbs and spices you prefer. We really like the freshness of mint paired with the herbaceous note of zaatar. But you’re free to mix in other flavors and even add a few lemon zest for a zing! It’s an ideal recipe for a last-minute aperitif, there’s almost nothing to do, apart from savoring it in advance. To make this recipe, follow the steps below:

EGG AND FETA SPREAD 😍

Serves: 2

Ingredients:

– 1 Tbsp pine nuts
– 2 hard-boiled eggs
– 50 g feta in block
– 2 to 3 Tbsp Greek yogurt (adjust to the desired texture)
– 1 Tbsp olive oil
– 1 handful fresh herbs (chives, parsley, cilantro, mint…)
– 1 pinch of spices (za’atar, cumin, chili…)
– Salt, pepper

Preparation:

1. Toast the pine nuts in a dry pan until nicely golden.

2. In a bowl, mash the hard-boiled eggs and feta with a fork and add the Greek yogurt. Adjust the amount according to the desired texture; it should be creamy.

3. Add the olive oil, half of the finely chopped fresh herbs, and the spices. Mix well.

4. Serve in a plate or a large bowl with a drizzle of olive oil, the toasted pine nuts, and the rest of the fresh herbs. Enjoy with toasted bread or raw vegetables!
