To make the doughnut dough, it’s child’s play; the hardest part will be patiently waiting through the rising times (to be followed carefully if you want truly fluffy doughnuts). Then we move on to the frying bath: two to three minutes on each side to achieve a beautiful golden color. Drain, roll in sugar, and voilà, it’s ready!

MINI DOUGHNUTS 🍩
For about 15 mini doughnuts
Ingredients :
– 250 g of flour
– 30 g of sugar
– 1 packet of vanilla sugar
– 4 g of salt
– 1 packet of active dry yeast
– 125 ml of warm milk
– 1 egg
– 25 g of unsalted butter, softened
– Neutral oil for frying
– Toppings: hazelnut spread, jam, powdered sugar…
Preparation :
1. Dissolve the yeast in the warm milk and let it rest.
2. In the mixer bowl, mix the flour with the sugar, vanilla sugar and salt. Pour in the milk with the yeast, then add the egg.
3. Knead until the dough is homogeneous before incorporating the softened butter. Continue kneading so that the dough is very supple and pulls away cleanly from the sides.
4. Shape into a ball and let rise for 1 hour 30 minutes in a warm place.
5. Deflate the dough, then shape 15 mini balls. Let them rise on a sheet with a clean cloth over them for another 30 minutes.
6. Heat the frying oil to 170°C, then fry the doughnuts for a few minutes until they are nicely golden. Drain on paper towels.
7. Roll the doughnuts in powdered sugar. You can then fill them with hazelnut spread, jam, or leave them as they are.
