We present to you the best summer tart with zucchini, cherry tomatoes and goat cheese. The result is creamy, crispy, generous and incredibly tasty! We start with a creamy base of soft cheese and pesto rosso, then lay our zucchini slices, cherry tomatoes and slices of goat cheese in a harmonious arrangement for a very appetizing result.

To make your tart irresistible, you’re going to love our two very simple tips. The first? A small sweet-and-salty marinade that will caramelize the vegetables, it’s so good. The second? To keep your shortcrust pastry nice and crispy, you’ll apply a thin layer of breadcrumbs that will “absorb” the moisture from the zucchini and tomatoes. To make this recipe, follow the steps below :

SUMMER ZUCCHINI, TOMATOES AND GOAT CHEESE TART ☀️

Serves 4 to 6 people

Ingredients :

– 1 shortcrust pastry
– 2 tbsp soft cheese
– 2 tbsp pesto rosso
– 50 g panko breadcrumbs
– 10 g fresh thyme
– 1 small zucchini
– 150 g cherry tomatoes
– 6 slices of goat cheese
– 4 tbsp olive oil
– 2 tbsp soy sauce
– 2 tbsp balsamic vinegar
– 1 tbsp honey
– A handful of pine nuts
– A few fresh basil leaves

Preparation :

1. Mix the soft cheese and the pesto rosso, then spread the preparation over the shortcrust pastry, leaving a 2 cm border. Sprinkle with breadcrumbs and fresh thyme.

2. Arrange the zucchini cut into thin rounds starting from the outer edge of the tart. Then add the cherry tomatoes cut in half and interleave slices of goat cheese.

3. In a bowl, mix the olive oil, soy sauce, balsamic vinegar and honey. Generously drizzle the entire tart with this marinade. Bake until the tart is nicely golden and caramelized.

4. When it comes out of the oven, scatter toasted pine nuts and add a few fresh basil leaves. Enjoy!
