Croissant Crème Brûlée 🥐
Serves 4
Ingredients:
– 4 egg yolks
– 4 Tbsp granulated sugar (about 55 g)
– 2 Tbsp cornstarch (about 25 g)
– 250 ml milk
– 1/2 tsp vanilla extract
– 30 g unsalted butter
– 4 croissants
– A little sugar for caramelization
Preparation:
1. Whisk the egg yolks with the sugar in a saucepan. Add the cornstarch and mix well to incorporate it.
2. Pour in the milk gradually while continuing to whisk. Add the vanilla extract.
3. Heat the mixture over low heat until the custard thickens. Stir in the cold butter off the heat and mix until it is fully melted.
4. Let the custard cool completely.
5. Hollow out a cavity in each croissant and fill with the custard. Refrigerate for at least two hours.
6. Before serving, sprinkle a little sugar on the custard and brûlée with a culinary torch until a beautiful caramelization is achieved. Enjoy immediately!
