FOCACCIA MUFFINS WITH PESTO AND PARMESAN 🌿💚

Servings: 12 muffins

Ingrédients :

For the focaccia dough :
– 500 g bread flour type T45 or T55
– 350 ml warm water
– 7 g active dry yeast
– 10 g salt
– 2 tbsp olive oil

For the pesto :
– 50 g fresh basil
– 30 g pine nuts
– 50 g grated parmesan
– 1 clove garlic
– 80 ml olive oil
– Salt, pepper

Preparation :

1. Start by preparing the focaccia: mix the flour, warm water, the yeast, and the olive oil. Add the salt and knead for about ten minutes until the dough becomes supple and slightly sticky.

2. Cover and let rise until the dough doubles in volume.

3. Make the pesto: blend the basil leaves, pine nuts, peeled garlic, grated parmesan, and olive oil until you obtain a smooth sauce. Taste and adjust the seasoning with salt and pepper according to your preferences.

4. Place parchment paper cups in muffin tins.

5. Deflate the focaccia dough and form 12 equal balls. Dip them generously into the pesto and then place them in the muffin cups.

6. Brush again with pesto and then create the focaccia wells by gently pressing your fingers into the dough. Top with parmesan shavings.

7. Bake at 220°C for 15 to 20 minutes until the muffins are nicely golden and soft. Enjoy!
