Apricots, Honey and Rosemary: A Summer Tarte Tatin to Delight Your Taste Buds

Whether it’s to finish the meal with a sweet touch or for a well-deserved afternoon break, this apricot tarte tatin will delight your taste buds! Moreover, it’s super easy and quick to make at home. We start by preparing a nicely buttered shortcrust pastry for a crunchy and indulgent edge. Then, we just have to assemble: honey for sweetness, rosemary for the herbal aroma, apricots for the fruity note, and the shortcrust pastry. A turn in the oven and the result is simply marvellous! Melt-in-the-mouth tender and crunchy, this apricot tatin will delight many this summer.

We like to accompany it with a little vanilla homemade whipped cream, but you can serve it with ice cream for a nice, cool contrast! It’s really the best fruit tart of the moment: economical, indulgent and addictive, let yourself be tempted by its summery and original flavors.

To make this recipe, follow the steps below :

APRICOT TARTE TATIN WITH HONEY AND ROSEMARY 🍑🍯🌿

Serves 6

Ingredients :

For the dough :
– 200 g flour
– 100 g cold butter cut into dice
– 30 g sugar
– 3 to 5 cl water

For the filling :
– 10 ripe apricots
– Honey
– A few sprigs of fresh rosemary

Preparation :

1. Mix the flour, the diced butter and the sugar with the tips of your fingers until you obtain a sandy texture.

2. Gradually pour in the water and knead until you obtain a smooth, homogeneous dough ball. Wrap and refrigerate for at least 30 minutes.

3. On a sheet of parchment paper, draw a circle about 20 cm in diameter and drizzle with honey. Scatter rosemary sprigs all around.

4. Place the apricots halved and pitted, the rounded side facing up, in a beautiful rosette.

5. On a floured work surface, roll out the dough and cut a disk slightly larger than the fruit circle. Place the dough over the apricots, fold the edges inward and prick the surface with a fork.

6. Bake 40 to 45 minutes at 180°C. On removing from the oven, flip the tart and carefully remove the parchment paper.

7. Decorate with a little more honey and a few more sprigs of rosemary. Enjoy with vanilla whipped cream or a scoop of ice cream!
